So since I'm stuck indoors I decided to make a start on lunch and then figured I'd let you in on my one of my "I'm feeling lazy" recipes, which I love making because despite the ease of it, it tastes pretty good. Ok this is no gourmet meal to make when your boyfriend's parents are coming round and you need to make an impression. It's more of a 'got loadsa friends coming round for lunch' type of thing.

Before I start I just need to say I love all things spice my hubby is a total lightweight in that department, so meals have to keep this is mind. I tend not to add too much spices or chilli and have actually learnt to appreciate the taste of the ingredients rather than just the burning sensation in my mouth! Oh and also my hubby is a fitness freak so I tend to cook low fat healthy options which works well for me too.
So the meal of the day is:
Curried Chicken with mini pizza toasts and a side of buttered baby potatoes.
Ingredients:
Curried chicken: for 1 kilo
Washed and sliced chicken breast
Tomatoes- 2
Green pepper -1
Garlic and Ginger- 1 cube each
Salt and pepper
Garam masala 1teaspoom
Tandoori masala 2 teaspoons
Mini Pizzas:
Slices of bread
Cheese- preferably mozarella
mushrooms
greenpeppers
tomatoes
olives
fresh green chilli (optional)
Potatoe side:
Baby potatoes
olive oil
butter knob
salt and pepper to taste
STEPS:
CHICKEN:
1) wash the sliced chicken breast (as always defrost chicken overnight in the fridge)
2) Add oil to pan- I usually make a kilo of chicken so use 2tsp veg oil
3) Add chopped green pepper and 2 chopped tomatoes
4) Add the spices including garlic and ginger cubes
5) Add Chicken and mix
6) Initially cook on high heat, once starts to bubble, low heat 45 mins, mix at 10-15 min intervals
POTATOES:
7) wash potatoes add to saucepan of water
8) boil until cooked usually 15- 20mins
9) drain, cut in halves, add salt and pepper to taste, olive oil drizzel +/- knob of butter
you can also add healthy low fat greek yoghurt
PIZZAS:
Pre heat oven to 380 F
10) Lightly toast bread preferably whole grain, place in oven dish
11) in a fry pan, lightly heat sliced mushrooms and cubed green pepper in drizzle of oil until soft
12) add these to the toasts
13) cut tomatoes into small cubes add to top of toast
14) add sliced olives, and anything else you might like eg slices chicken, pineapple, tune etc
15) Cover in cheese
16) place in oven 20mins until cheese and toppings crispy
You can also grill if you have less time.

No pics of served meal unfortunately, we ended up going out to a fancy restaurant instead courtesy of hubby! so it was all tuperwared away!
